Being the most modern restaurant to carry El Cardenal’s name, it opened its doors in August 2006 with thirty seven years of work as background. Its dining room features a black clay showcase used for exhibition of popular art works, displaying a side of our national essence. Its opening also had a fundamental importance to the restaurant’s organization, given the fact that this branch was for the first time outside the downtown area where we had concentrated all of our professional experience. From its beginnings in the modest building at Moneda Street up to the opening of this establishment, there was not only the distance separating the Historic Center from Lomas de Chapultepec, but also a long road full of challenges behind, to which was added the challenge of working with three open branches without diminishing the quality of the dishes, nor keeping away from the traditional processes of Mexican cuisine.
In this venue El Cardenal opens its doors for our guests to witness firsthand the ancestral techniques of Mexican cuisine, such as the elaboration of "nixtamal" and the tortilla many times seen, and continuing with its determination to rescue our culinary identity.
